    Shrimp Spring Rolls are super light and yummy! Since egg roll wrappers aren’t gluten-free, it’s nice to have the option to eat spring rolls. The wrappers are rice paper. These make for an excellent appetizer or side item to the Chinese chicken lettuce cups I’ve posted. The trick with rice paper is not to leave it submerged too long in the warm water.
